Baldman's Stew

Hi all,

this is a recipe we use when camping and fishing on the beach at the Coorong, called Baldman's Stew due to the potatoes in it.

Ingredients,
5 medium size potatoes cut in quarters,
3 carrots cut in thirds,
5 -6 good size mushrooms,
1 stick of celery cut into chunks,
1 onion cut in half then sliced,
2 beef stock cubes,
2/3 cup of flour,
tablespoon of tomato paste (optional),
1/4 glass of red wine,
500 grams of diced beef,
olive oil,
garlic,
seasoning (whatever takes your fancy)


Heat your camp oven with some coals and add 2-3 tablespoons of oil

When the oil is hot brown the meat in batches and remove to another container.

When all the meat is browned add another 2 tablespoons of oil to the camp oven, and then add the onions and garlic.

When the onion is translucent, add the flour and stir with a wooden spoon.

If you end up with a gluggy mass of flour and onion don't worry, stir for a bit longer and then add about 500ml of water and stir. You will end up with a gravy type mix.

Add the 2 crushed stock cubes and mix.

Boost up your coals and bring the mix to the boil.

Then add all you veggies (except the mushrooms) and the meat.

Add the tomato paste, and wine and then season to your taste.

Keep the camp oven simmering for approx 1.5 hours.

then add the mushrooms and allow to simmer for a further 15 minutes.

Ready to eat, either on its own or start cooking some rice in a seperate pot when you add the mushrooms.

On a cold wet day it's the perfect meal with a piece of fresh damper.
